Every bag of beans we sell gets roasted in a small batch in the back room of the shop, usually while the first customers are still deciding what to order. This month's roast has been a lot of fun to work on. We pulled it a little earlier than usual to keep the sweetness up, and it tastes like brown sugar and baked apples.
